E. Coli Infection

Food poisoning affects millions of people every year; often people do not even realize it, and assume their symptoms are caused by the flu or a stomach virus. Some cases, however, are much more severe. According to the US Centers for Disease Control and Prevention, over 3 million Americans experience severe food poisoning requiring hospitalization every year. One of the most dangerous diseases spread by improperly prepared food is Escherichia coli, commonly known as E. coli.

While anyone can be affected by E. coli, small children and senior citizens are more prone to life-threatening complications caused by this illness. If you or a member of your family has suffered from a severe E. coli infection due to the negligence of a restaurant, agricultural corporation, or food product manufacturer, we can help. Call Orlando food poisoning injury lawyer Todd Miner at 407-420-4040.

The Spread of E. Coli

Most strains of E. coli are harmless, and some even assist with the process of digesting food. Certain strains, however, have variations that make them highly toxic to humans. The most common cause of harmful E. coli infections is a strain known as E. coli 0157:H7.

E. coli bacteria generally live within mammals’ digestive tracts and can be spread by contact with fecal matter from infected animals. E. coli contamination of food can be caused by errors such as:

  • Improper hygiene among food industry workers (as well as day care and nursing home workers)
  • Inadequate safeguards in farms, slaughterhouses, and food processing plants
  • Undercooked meat, particularly red meat
  • Poor waste management, which can potentially contaminate water supplies
  • Incorrect food storage or preparation

Toxic E. coli strains cause severe abdominal cramps and diarrhea, sometimes with fever and/or nausea. If victims do not receive prompt and comprehensive medical treatment, they can suffer from dehydration, kidney failure, and even death. Food industry workers and employers have a very important responsibility to recognize the risks of E. coli infection and protect their customers.
